MicroSure™ Plus heat treatment ensures safe, stable and fully nutritious specialty grains and seeds. MicroSure is a third party validated 5-log kill process designed specifically to eliminate pathogens in flax, chia, quinoa and other seed and grain ingredients. Raw seeds and grains are not safe without a kill step

Seeds are inherently nutritious. But like any field crop, they are also inherently susceptible to contamination from pathogens introduced by rain, wind, standing water, birds, mice, and other natural factors. The thousands of illnesses and even deaths from E. coli and Salmonella contaminated products are well documented. What may not be well known is that the responsibility for the safety of their products ultimately rests with the food manufacturers, and that manufacturers are the ones held liable for food borne illnesses. The risks are too dire to ignore. For minimally processed foods and beverages in particular, it is imperative that the ingredients used be 100% food safe.

The MicroSure Plus advantage

MicroSure Plus heat treatment is a third party validated 5-log kill process. Validation of the MicroSure Plus process was conducted by an Independent Process Authority on flaxseed and chia. The procedures followed during this validation were modeled after the Almond Board of California (ABC) Guidelines for Process Validation using surrogate organism for salmonella: Enterococcus faecium NRRL B-2354. The Almond Board process is also commonly used for pistachios, hazelnuts, peanuts, walnuts, macadamia nuts and sesame seeds. The results of the validation on multiple samples of MicroSure Plus heat-treated flaxseed and chia were well in excess of a 5-log kill.

Food Safety is just the start

MicroSure Plus heat treatment not only provides peace of mind, it also improves the sensory characteristics of raw seeds and grains. Sensory testing conducted at North Carolina State University reveals that MicroSure Plus heat-treated, fine-milled flaxseed shows 71% less aroma intensity compared to raw seed and 100% less bitter taste and green notes. MicroSure Plus significantly improves overall flavor impact while maintaining the stability of Omega 3 oil in oilseeds.
